Pancakes!

We have been on a homemade pancake kick lately and here is an easy and delicous recipe that I tweaked from a couple of websites.  This one contains all "real" ingredients. (I've been into the "100 Days of Real Food" blog lately - check it out if you haven't - there are some really good recipes.)  Thought some of you out there might enjoy.


Whole Wheat Oatmeal Pancakes

1 ½ cups whole wheat flour
½ cup quick cooking rolled oats
2 teaspoons baking powder
1 ½ teaspoons baking soda
A dash of cinnamon
½ teaspoon salt
1 tablespoon honey
2 large eggs, lightly beaten
1 ¾ cups milk
2 tablespoons unsalted butter, melted – plus more for coating pan while cooking
100% pure maple syrup for topping

  1.      Mix together dry ingredients.
  2.      Make a well in the dry ingredients and add the honey, eggs, milk, and butter. 
  3.      Mix together, being sure not to overmix.
  4.      Heat pan on medium-high.  Coat bottom with butter.  Scoop pancake batter with a soup ladle or measuring cup and flip when bottom has browned. 

        Serve with syrup and fruit and enjoy!
