Whole Wheat Oatmeal Pancakes
1 ½ cups whole wheat flour
½ cup quick cooking rolled oats
2 teaspoons baking powder
1 ½ teaspoons baking soda
A dash of cinnamon
½ teaspoon salt
1 tablespoon honey
2 large eggs, lightly beaten
1 ¾ cups milk
2 tablespoons unsalted butter, melted – plus more for
coating pan while cooking
100% pure maple syrup for topping
- Mix together dry ingredients.
- Make a well in the dry ingredients and add the honey, eggs, milk, and butter.
- Mix together, being sure not to overmix.
- Heat pan on medium-high. Coat bottom with butter. Scoop pancake batter with a soup ladle or measuring cup and flip when bottom has browned.
Serve with syrup and fruit and enjoy!

I've been looking (well, I thought about looking) for a healthier pancake recipe. Sounds delish! I'll have to give it a try. Yay for blogging!
